Candy Corn Mini Cupcakes

Candy corn is a food group in my house. The Punkies and Kim love it! They also love mini cupcakes and I make all kinds all the time. So when I found this little recipe for mini cupcakes with candy corn I had to make them!


This is what you need:
1 box white cake mix with pudding
Water, veg oil, and egg whites called for on cake mix box
1 teaspoon orange paste food color
1 teaspoon yellow paste food color
2 containers creamy white ready to spread frosting
orange and yellow coarse sugars or other candy sprinkles
48 pieces of candy corn
  1. Heat oven to 350. Place mini paper baking cup in each of 48 mini muffin cups. Make cake as directed on box for cupcakes,using water, oil and egg whites.
  2. Divide batter evenly among 3 bowls. Stir orange food coloring in one, yellow in another and leave one white.  Place about 1 teaspoon of each color batter into each muffin cup, layering colors in order of candy corn-yellow, then orange and then white.  Do not stir!  Each cup should be about three-fourths full.
  3. Bake about 15 minutes. Cool 10 minutes; then remove cupcakes from pan and put on a cooling rack. Let them cool completely about a half hour.
  4. Frost your cupcakes. Sprinkle with the sugar; top with candy corn!
It is really easy and they are totally cute!




Princess and Buddha were the only the only ones up from their nap but they gave them two thumbs up!
